Valentine’s Day Peanut Butter Kiss Cookies

What could be a more perfect treat for Valentine’s Day than “KISS” cookies? Unless you count those awful conversation hearts, there isn’t a more iconic candy for the holiday than Hershey’s kisses! And add a few drops of red food coloring to the batter and your Valentine will be so impressed!

These are a bit healthier version than the traditional peanut butter kiss cookies that use either a baking mix such as Bisquick, or the traditional version with the sugar, flour, etc. Starting with Kodiak Cakes protein packed pancake mix as the base adds a shot of protein with less sugar/carbs. Using fat free sweetened condensed milk for less fat and PB Fit powdered peanut butter for some more protein with less fat than peanut butter produces a very macro-friendly cookie without sacrificing any taste.

No one will know they are anything other than delicious! And if you’re not convinced to try them yet, I promise this recipe is fail-proof and quick!

Super easy to make, with 4 ingredients and requiring only 8 minutes of baking time, this is a fun one for kiddos to help with too. Pressing the kisses on top of the warm cookies is something even the littles can do! They will not look like they are done after only 8 minutes, but the pancake mix keeps them soft. Don’t overbake!

These have an almost cake-like texture, not that crisp snap that some peanut butter kiss recipes produce. They store well and stay soft for several days, but guaranteed they won’t last that long!

And if you’re feeling adventurous, this recipe is open for your own personal flavor flare! With so many delicious flavors of Kodiak cakes to choose from and all the different types of Hershey’s kisses, the flavor combination possibilities are more than my math challenged brain can figure out.

What You Need

  • Kodiak Cakes Protein Pancake Mix (any mix will work!)

  • Fat Free Sweetened Condensed Milk

  • PB Fit or PB2

  • Hershey Kisses

  • Red Food Coloring

Recipe

  • 3/4 cup peanut butter

  • 1 cup Kodiak Cakes mix (I used the crunchy peanut butter mix, but any will work!)

  • 1/3 cup PBfit (I used the regular version, but chocolate would be amazing too!)

  • 1 can (14 oz.) fat free sweetened condensed milk

  • 24 Hershey kisses

  • Red Food Coloring

Directions

  1. Preheat oven to 350 degrees

  2. Cream together the peanut butter, food coloring, and sweetened condensed milk with a mixer

  3. Slowly add in the Kodiak Cakes mix, and the PBfit until fully combined

  4. Form dough into one inch balls and place on a baking sheet

  5. Bake for 8 minutes

  6. Press a Hershey Kiss into each cookie and let cool for 10 minutes

  7. Enjoy!
