Apple Cinnamon Bars
I was so excited to see how many of you were so excited about this recipe! To be fully transparent, I've been in somewhat of a recipe rut lately. My life is in it's busiest season right now so I'm kind of just going through the motions when it comes to being in the kitchen.
I'm a recipe repeater by nature but especially when things get busy! I get in the habit of making the same thing over and over again, because it's easy and it doesn't take much effort! But sometimes, it's the most random things that spark a recipe idea for me, and that's what happened last week!
I was at the store and noticed that honeycrisp apples were back - maybe they never went away, but I just started noticing them again and I immediately wanted to use them for something. Apples remind me of spring and summer, and warm weather so I figured now was the perfect time!
I also realized when I got home that I've been buying Kodiak Cakes nearly every single week, forgetting about it, and never using it. So I now have 8 boxes of buttermilk Kodiak Cakes mix in my pantry! That said, I decided to combine the apples with the Kodiak Cakes, and this recipe was born.
I know I say it every single time, but it could not be easier. It's five ingredients, you can make it for breakfast, a dessert, breakfast for dinner, for some pre workout carbs, whatever you want! It's quick to throw together, it's kid friendly, and it's ready in less than 30 minutes!
Note
I will warn you - they're not INCREDIBLY sweet. Keep in mind, the base is a pancake mix so they're just slightly sweeter than a plain pancake is. The hint of syrup and sweetness from the apple makes them perfectly sweet to me, but if you'd like them a lot sweeter, you can add 1/4 cup sugar! You'll just have to increase the amount of water you use by a little bit.

Apple Cinnamon Bars
This recipe couldn't be easier! It requires a few, simple ingredients and it comes together in less than 30 minutes! The fresh apples remind me of summer and warm weather and they pair so perfectly with the cinnamon pancake base. Eat them for dessert, as a snack, breakfast, breakfast for dinner, whatever you like!
2 cups Kodiak Cakes Buttermilk Pancake Mix
1 large honeycrisp apple, finely chopped
1 cup water
1/2 cup light/low sugar maple syrup
1 Tbsp cinnamon
Preheat the oven to 350 degrees!
Combine the pancake mix in a large bowl, with the apples and cinnamon.
Add your water and syrup, and combine thoroughly.
Your batter should be pancake batter consistency, but if it's too thick, keep adding water a little bit at a time until it's reached the desired consistency!
Pour batter into a greased 8x8 pan.
Bake for 20 - 25 minutes, or until a toothpick/knife comes out clean.
Let them cool completely, then slice and serve with more syrup, or my favorite: peanut butter!
How I Eat them?
You can top these babies with whatever you'd like! But my favorite way to eat them is to warm in the microwave for 20 seconds, add a Tbsp of peanut butter on top, and a drizzle of syrup!
