Cake Batter Bites

Wow. I don't know that I've ever had more DM's about a recipe in all my life. Safe to say, you guys love cake batter anything as much as this girl, and that's saying something.

This recipe is just like anything else I share: quick, easy, minimal ingredients. The only way it strays from my usual is that it's not healthy by any means. But hey, everything in moderation.

This is my favorite recipe to bring to a gathering, family event, or really anywhere you're trying to impress people. It's always raved about and I've never met anyone who didn't like them. We keep them out on big lake weekends and they don't ever last very long!

A couple of things I want to mention before I spill the goods!

I haven't ever tried subbing anything in this recipe; no pumpkin, no applesauce, greek yogurt, etc. I'm not saying it wouldn't work, I've just never tried.

Something else worth noting is that the rest/chill time on this recipe is really important. One of the things I love about this recipe is that it's never dry! The key to that is making sure the bites are just a tiny bit underdone.

When you pull them out, they're not going to look 100% done and I can guarantee they won't pass the toothpick/clean fork test, but that's what makes them so good! But that also means you can't cut into them and serve them right away.

The key is to let them set in the refrigerator for at least two hours. This will make sure they set up enough for you to cut them, while still being doughey and amazing.

I also like to cut these into bite sized pieces, hence where they got their name. You can do them in normal brownie size pieces, but they are RICH and often times I feel like they are too much when they're cut too big. The smaller pieces make them easier to grab and go!

Lastly, you can use any cake mix you like! I think the funetti is the best, but any mix will work for these! We've done yellow cake mix, and red velvet, and both were equally amazing!


Ingredients

  • cake mix (I use funfetti, use what you love!)
  • eggs
  • butter, melted
  • white chocolate chips


Note

I always double this recipe when making for a larger group. If you're doing that, just double everything listed & increase the bake time to 40 mins.

Cake Batter Bites

This is a long, longtime favorite of all my friends and family! I bring these to every family gathering, we make them for every holiday, they are a true staple in my house. They can be make with any cake mix, although funfetti is definitely superior. They only require a couple of ingredients, and the recipe makes a ton. It's buttery, cake batter goodness, and I know you'll be obsessed!

  • 1 box cake mix (we love funfetti!)
  • 2 eggs
  • 2 cups white chocolate chips
  • 1 stick melted butter
  1. Preheat the oven to 350.

  2. Spray an 8x8 baking dish with oil spray.

  3. Combine all four ingredients until well mixed.

  4. Spread evenly in baking dish; mixture will be super thick! That's how it's supposed to be!

  5. Bake for 18-20 minutes!

  6. Immediately chill in the fridge for two hours; this will allow the bites to set up before you cut them!

  7. Cut into bite sized pieces, and enjoy!
