Cake Mix Cookies

Ingredients:
  • 1 box cake mix (I used spice cake but any will work!)
  • 1 cup canned pumpkin (you CANNOT taste the pumpkin so don’t let this scare you!)
    • yes, you use pumpkin regardless of the cake mix you choose to use
  • 1 egg
  • 1/4 cup toffee bits
Directions:
  1. Mix cake mix, pumpkin, and egg in a stand mixer until thoroughly combined.
  2. Gently fold in toffee bits.
  3. Use a cookie dough scoop to evenly scoop 36 cookies onto a greased cookie sheet.
  4. Bake at 350 for 10-12 minutes.
    1. smaller version (36 cookies) need closer to 10-12!
    2. bigger version (18 cookies) need closer to 12-15!
  5. Enjoy!
  6. Note: these need to be stored in the fridge!
