Cake Mix Cookies
Ingredients:
- 1 box cake mix (I used spice cake but any will work!)
- 1 cup canned pumpkin (you CANNOT taste the pumpkin so don’t let this scare you!)
- yes, you use pumpkin regardless of the cake mix you choose to use
- 1 egg
- 1/4 cup toffee bits
Directions:
- Mix cake mix, pumpkin, and egg in a stand mixer until thoroughly combined.
- Gently fold in toffee bits.
- Use a cookie dough scoop to evenly scoop 36 cookies onto a greased cookie sheet.
- Bake at 350 for 10-12 minutes.
- smaller version (36 cookies) need closer to 10-12!
- bigger version (18 cookies) need closer to 12-15!
