Easy Egg Bake

The easiest breakfast prep EVER. I made this this weekend and truthfully, it made enough for me to not only eat it for breakfast this week, but lunches too! No shame. I hope you love it as much as I do!

Ingredients:

  • 1 carton egg whites (32 oz.)
  • 1 package (20 oz) hash browns (if frozen, thaw them)
  • 1 package (10oz) frozen peppers (thaw and drain them)
  • 1 package (10oz) frozen onions (thaw and drain them)

Directions:

  1. Preheat your oven to 350.
  2. Grease a 9x13 pan, and add hash browns.
  3. Bake hash browns for 15 minutes (this step can be removed, it just makes the has browns crispy/not soggy).
  4. After the hash browns come out, spread your onion and pepper mix evenly on top. If you want to add cheese to this, here is where you'd add it!
  5. Add your egg whites on top! Season to taste.
  6. Bake for 50 minutes, or until golden brown.
  7. Cut into 8 even squares and enjoy!
