Crispy Garlic Smashed Potatoes

Side dishes are usually not my specialty. Savory recipes in general are not my specialty.

I don't really know why, I just don't ever spend much time on them! By the time I figure out the main part of my meal, I usually go for a salad or a roasted veggie and call it good.

The only time I ever stray from this is when we have friends and family over. It forces me to step outside my box to try something new. I'm thankful, because that's how this recipe happened, and it's quickly become a family favorite!

I've seen baby red potatoes at the store for months, usually in the little containers that come with the herbs and sauce and everything all prepackaged. They always look so good, and come in so many fun flavors, but they're so dang expensive!

Finally, I decided I'd try my hand at making them myself, sans the grocery store, prepackaged kit.

Baby potatoes happened to be on sale the first time I bought them so I figured I'd give it my best shot and see what happened! I feel like it's pretty hard to mess up potatoes, right?!

Right. Seriously, there is absolutely no way you could mess this up. Even if you don't follow my exact measurements, or you want to add other spices that you have on hand, you can't mess it up!

If you try my recipe and like it, I would encourage you to play around with the ingredients to create some other combinations. This recipe is a great starting point, but there are so many things you could do with them!

My advice is to serve these fresh out of the oven; they don't lose their crispiness if you store in the fridge! So keep that in mind when you're deciding how many to make.

  • olive oil
  • minced garlic
  • dill
  • parmesean cheese

Crispy Garlic Smashed Potatoes

An easy, crowd pleasing side dish! This dish was created out of my frustration that the smashed potato kits at the grocery store are so expensive! I created a recipe on my own that's not only more affordable, but so delicious. The recipe is fool proof, and has become one of our favorite sides! Crispy, garlicy, potato perfection!

  • 1.5 lb baby potatoes (I used a "gemstone" variety, but whatever you can find will work!)
  • 1/3 cup olive oil
  • 2 Tbsp minced garlic
  • 1 Tbsp dill (dried or fresh will work)
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste
  1. Preheat oven to 425 degrees.

  2. Wash your potatoes and place in a large pot. Fill with water until the potatoes are covered.

  3. Boil on medium heat until potatoes are fork tender, about 25 mins.

  4. Line a baking sheet with a silicone baking mat, or spray with cooking spray.

  5. Combine the olive oil, garlic, garlic salt, and dill, and set aside.

  6. When the potatoes are done, drain and let cool for about 10 minutes.

  7. Distribute the potatoes on the baking sheet, and smash with the back of a spoon, with a fork, or a potato masher (I actually used the bottom of a clean glass mason jar and it worked great!).

  8. Drizzle the olive oil mixture onto the smashed potatoes.

  9. Bake for about 15 minutes, then pull them out to sprinkle on the parmesan cheese.

  10. Bake for an additional 5 minutes, sprinkle with fresh cracked black pepper, and they're done!
