Easy Artichoke Jalepeno Baked Chicken
I've started to realize that as popular as all of the treats, desserts, and snacks on the blog are, I need to start working on some more dinner recipes!
Taylor and I had a conversation about this last night at dinner, and I told him, "dinner is just not my specialty". Which is 100% true!
I love creating healthy treats and snacks, just because when I started blogging, that's what I was in search of myself. I didn't feel like there were enough food bloggers creating desserts and treats, that were still healthy. So, that's always what I've done, and that's always been my comfort zone/safety net when it comes to content creation!
I think it also boils down to the fact that dinner is just not my favorite meal, plain and simple. I love breakfast and lunch, and I obviously love sweets, but dinner .. meh. It's always a meal we're kind of rushing to eat, post workout, so that we can watch Netflix or go run errands, etc. It's just not a meal we really sit down and enjoy, so I never spend a ton of time making big elaborate dinners!
Also, let's be real. I know I'm in the minority, but I would be totally fine with grilled chicken and sweet potatoes for the rest of my life. I am easy to please, and repetition does not bore me! However, I know most people are not that way.
Needless to say, the dinner recipes I do have on the blog often get the most traction, and I get a lot of dinner requests in my DMs, so I'm working on expanding this area of the blog for you guys!
First up: Artichoke & Jalepeno Chicken!
I know I say this often but truly one of the easiest recipes EVER. It's literally three ingredients, that's it! It takes around 40 minutes to make, and you can make a ton of it at once.
Don't let the word "jalapeno" scare you, it has a little kick, but it's not spicy at all!
It would be great paired with a side of roasted veggies, sweet potatoes, cauliflower rice, you name it. The flavor is out of this world, and would be perfect with anything you can think of!
Ingredients:
- chicken breasts
- Trader Joes Jalepeno Artichoke Dip
- mozarella cheese
- salt and pepper
Jalepeno Artichoke Chicken
This recipe is quite possibly the easiest chicken dish you could ever prepare, and a favorite in our house. It's high in protein, while being creamy, delicious, and full of flavor at the same time. This is a great recipe to prep ahead of time, as you can easily make a big batch at once. If you don't love, spicy, don't worry, the jalepeno is mild and anyone can eat this!
- 4-6 raw chicken breasts
- 1 container Trader Joes Jalepeno Artichoke Dip
- 4 oz mozzarella cheese
- salt and pepper to taste

Preheat oven to 400 degrees.

Place a wire baking rack on top of a baking sheet, and place your chicken breasts on top. This allows the fat and juices to drain from the chicken as it bakes.

Season your chicken breasts with salt and pepper to taste.

Spread 2 Tbsp of the jalapeno artichoke dip on each chicken breast.

Bake for 35-40 minutes, or until the internal temperature of the chicken breasts reaches 165 degrees. I use this meat thermometer!

Pull out of the oven, spread the mozzarella cheese evenly amongst chicken breasts.

Put back in the oven for 3-5 minutes, or until cheese is melted.
