Easy Beef Stir Fry
Would you believe me if I told you I'd never cooked beef before? Truthfully, anything other than chicken or salmon is just foreign to me. I don't know why, I've just always thought it was super complicated. Now I'm kicking myself for waiting all these years to try it on my own. It was just as easy as anything else I've ever made!
I was approached by the Kansas Beef Council for their United on the Plate campaign this month and I was so excited to think outside of my usual box, to come up with something fun and different!
Stir fry is not in my usual lineup, and I was somewhat intimidated to try it. But I know that if there are certain dishes I'm intimidated by, surely some of you out there are too! My goal is always to make recipes less intimidating, so this was the perfect recipe to tackle!
Beef
I think it's important to recognize the benefits of the different proteins we use in different recipes. By participating in this campaign, I actually learned a lot about beef and the benefits to using it.
Nutrients in beef combined with fruits and vegetables boosts the absorption of certain vitamins and minerals.
For example, vitamin C from broccoli, bell peppers, and tomatoes enhances the absorption of iron found in beef.
Small amounts of fat from beef helps improve the absorption of fat-soluble vitamins such as vitamin A found in dark green leafy vegetables, sweet potatoes and carrots and vitamin K found in kale, spinach and Brussels sprouts.
Lean beef provides high quality protein, zinc, iron and B vitamins which are essential nutrients - within a small caloric package - that you would miss out on when eating plant foods alone.

Beef Stir Fry
This beef stir fry is an easy and fool proof weeknight dish, sure to impress whoever you're cooking for! It requires minimal ingredients, is extremely quick and convenient, yet doesn't lack in the flavor department. It's packed with protein and veggies, and is made with the best homemade and low sugar teriyaki sauce! This will end up on your repeat recipe rotation in no time.
1 lb flank steak
14 oz bag of frozen stir fry vegetables
1/3 cup low sodium soy sauce
1/4 cup water
3 Tbsp sugar free maple syrup
1 Tbsp minced garlic
1 Tbsp ginger paste
2 Tbsp cornstarch
Start by using a sharp knife to slice the flank steak into thin, bite size slices.
Coat your steak in 1 Tbsp of cornstarch, then set aside.
Next, combine the soy sauce, water, maple syrup, garlic, ginger, and remaining Tbsp of cornstarch into a small bowl. Whisk until fully combined.
Place a skillet or wok on medium heat, spray with olive oil, wait until the oil is hot, then add your flank steak.
Cook for about 5-6 minutes, or until the beef is browned on all sides. You're looking for an internal temperature of 145-160 degrees.
Next, add in your vegetables, and teriyaki sauce, and simmer for about 5 minutes.
Serve in a lettuce wrap, or on a bed of rice/cauliflower rice, and enjoy!
