Fruity Pebble Protein Cinnamon Roll Bake

Holy cow, you guys. You're in for it with this one.

I had to physically stop myself from eating the entire pan for dinner last night, it's that good.

I started thinking about this recipe because a local bakery in KC started selling homemade Fruity Pebble cinnamon rolls. Because my cinnamon roll bake is already a great base, I knew I would only have to change a few things in order to create a more Fruity Pebble flavor. So that's what I did!

While I was messing around with the recipe, I decided to add some protein powder. The base recipe really doesn't have a ton of protein, but it's also a recipe with few opportunities to add it in, so I wasn't sure about how it would turn out. But it worked perfectly!

What You'll Need

  • cinnamon rolls (in the tubes)

  • eggs

  • almond milk

  • vanilla

  • strawberry extract

  • vanilla protein powder

  • fruity pebbles

  • cream cheese

About the protein powder

The protein powder you use in a recipe is super important. Trust me when I say, I’ve tried them all and they are not all created equally.

Some get gritty when you combine them with other ingredients, some don’t disolve super well, some are chunky, etc. There are a lot of reasons certain protein powders don’t work; all you need to know is that I only use one brand – IHeartMacros! Once you try it, you’ll never go back.

Fruity Pebble Protein Cinnamon Roll Bake

This decadent breakfast recipe is not only easy as pie, but it'll take you right back to your childhood with a Fruity Pebble kick. Based off of my ever popular cinnamon roll bake, this version has a fruity spin, and it's packed with vanilla protein. This is husband friendly, kiddo friendly, and perfect for St. Patrick's Day!

  • 2 tubes (16 rolls) refrigerated cinnamon rolls

  • 6 eggs

  • 1/2 cup almond milk

  • 1/2 tsp strawberry extract

  • 3/4 cup fruity pebbles

  • 2 scoops IheartMacros vanilla protein powder

  1. Preheat your oven to 350 degrees.

  2. Spray the bottom of a 9x13 glass baking dish with baking spray!

  3. Cut your cinnamon rolls into quarters and layer into the bottom of the baking dish. Layer the Fruity Pebbles on top, and gently press into the dough so they bake into the cinnamon rolls!

  4. In a separate bowl, combine the eggs, almond milk, strawberry extract, and protein powder. I used an immersion blender, but a blender, nutribullet, or even shaker bottle would work! You just want to make sure your protein powder dissolves and isn't clumpy!

  5. Pour the egg mixture over the cinnamon roll pieces, and pop into the oven for 30 minutes!

Cereal Milk Cream Cheese Frosting

This frosting is a non negotiable in this recipe, trust me. It's easy to throw together, and it makes the entire recipe!

  • 2 packets icing (the ones included in the cinnamon rolls)

  • 6 oz 1/3 less fat cream cheese, room temp

  • 1 scoop IheartMacros vanilla protein powder

  • 1 + 1/4 cup fruity pebbles

  • 1 cup almond milk

  • 1/2 tsp vanilla extract

  1. In a small bowl, combine the almond milk and 1 cup of Fruity Pebbles, and let them sit for about 20 minutes. You really want the milk to take on the Fruity Pebble flavor!

  2. Add the icing, cream cheese, vanilla extract, and protein powder to a stand mixer. Whip until combined.

  3. Slowly add in the cereal milk until the frosting is the consistency that you want! Last, fold in the remaining 1/4 cup of fruity pebbles.

  4. Ice your cinnamon roll bake!
