Macro Friendly Breakfast Enchiladas

Every time I write a post I feel like I start with, "it's been a minute ..." and it always has! I'm so into reels these days that I do sort of miss the blog posts, so I'm back for a minute until who knows when!

Breakfast enchiladas have been on my to do list for awhile. The other macro friendly enchiladas I have on my blog are one of the most popular recipes on my site, so I knew people would be into this breakfast idea.

This is the funny thing though, even though I know, love, and have made my recipes more than probably anyone else, I still feel somewhat overwhelmed by certain recipes, even when I know the end result is so worth it! Enchiladas are one of them.

Which again, is so stupid because it makes an entire week's worth of enchiladas in like 30 minutes. I realize I sound like the laziest cook ever, and I have no problem admitting that I am. I feel like a lot of us are in the same boat, hence the reason for this blog, and the reason it's worked out okay for me so far.

Anyway, it took a couple of months of putting off, but I finally got my recipe written out, went to the store, and got the damn enchiladas made. And they are GOOD. I wish I hadn't waited so long, so don't be me!

This recipe is the absolute best for breakfast prep. If you find yourself getting hungry mid morning, it's probably because you haven't had enough breakfast / what you ate wasn't super high in protein, OR, maybe you skipped it entirely. Make this recipe.

What You'll Need

  • small(er) tortillas

  • eggs

  • peppers (frozen or raw, either one)

  • mozarella cheese

  • turkey sausage

  • enchilada sauce

  • salsa verde

Recipe Notes / Options

  • These can easily just be made as breakfast burritos! Obviously skip the sauces and the baking, wrap them in foil and refrigerate or freeze!

  • These can also be made as flautas, skip the sauces and bake until crispy!

  • Although they are not "spicy" (even my husband who will NOT eat anything spicy loves these!) if you have kiddos or you're making for someone who doesn't like any spice at all, I'd recommend one of these two options!

Macro Friendly Breakfast Enchiladas

This recipe is a quick and easy way to make a huge serving of macro friendly, high in protein, delicious breakfast enchiladas. They're packed with protein to help keep you satisfied throughout the morning! These could easily be tailored to include whatever filling you like, especially if you're making for kiddos!

  • 6 mediums sized tortillas (I used Hyvee Low Carb)

  • 6 eggs

  • 2 bell peppers (finely chopped)

  • 12 turkey sausage links, chopped

  • 6 triangles of light laughing cow cheese

  • 2 cups mild enchilada sauce

  • 1 cup salsa verde

  • 8 oz Finely Shredded Low-Moisture Part-Skim Mozzarella Cheese

  1. Preheat oven to 375 degrees.

  2. In a skillet on medium heat, cook your eggs until scrambled and fluffy! Then add sausage and peppers. Turn the heat to low, and put the lid on your skillet. Let it sit for 3-4 minutes to allow the steam to soften up the peppers!

  3. On wax paper, lay out 6 tortillas, and spread the laughing cow cheese!

  4. Evenly fill (I used a 1/3 cup measuring cup) each tortilla with egg/turkey sausage/pepper mixture.

  5. Add 1/4 cup of cheese to each tortilla. Save the last 1/2 cup for the end!

  6. Roll each tortilla tightly and place in a greased baking dish.

  7. Layer on the enchilada sauce, then the salsa verde. Bake for 20 mins or until tortillas are golden brown.

  8. Pull the enchiladas out, add cheese, and bake for another 2 mins.
