Mini Banana Bread Loaves

I've decided that anything mini is exponentially better than something average size. That being said, what could be better than banana bread? Mini banana breads.

I got this silicone "brownie" pan from Amazon, in an attempt to pretty much replace all my metal bakeware with silicone. If you don't own anything silicone, it's life changing. No oil, no spray, no butter, no greasing; everything comes out of it with zero mess or caked on batter.

You put the silicone in the dishwasher and you're done! It will come out looking brand new!

I love making banana bread, but sometimes storing a loaf of banana bread, cutting it into even slices, etc, can be a pain. That's when I decided to try it in this brownie pan. It turned out amazing and I'm here to share it with you today!

This pan can be used a variety of ways, but I love how these little loaves turned out! And really, there's nothing better than a baby banana bread!

About the recipe

I get lots and lots and lots of questions on substitutes when I create recipes. I'm here to tell you that if it's not listed in the ingredients list, I haven't tried it! All that to say, just experiment with it!

Maybe you have a different brand of pancake mix at home - try it! I can't say whether or not Birchbenders will work, or hold up as well, but it's worth a shot! The same can be said for any of the ingredients listed.

There are a ton of great alternatives and substitutes, I just don't necessarily have the time to try them all out!

Why I love Kodiak Cakes

If you've followed for any length of time, you know that I use Kodiak Cakes quite a bit. The reason I love them so much, is because of how well their mixes bake.

Pancake batter tends to be dense and heavy, but Kodiak cakes is light and fluffy, and bakes in the oven just as well as it does in a pancake on a skillet!

I also love that it packs such a punch with it's protein content. When I'm creating recipes that I want to contain protein, I usually have to figure out how to add in whey protein, without drying the recipe out.

Using Kodiak Cakes eliminates that step for me since the "Protein Packed" line already contains protein.

Ingredients:

  • 2 cups Kodiak Cakes (I used the protein packed buttermilk, any flavor will work)
  • 1 cup (about 2 small bananas) mashed banana
  • 1 egg
  • 1/2 cup pumpkin
  • 1/4 cup granulated sugar, or 1 tsp liquid stevia
  • 1 - 1.5 cups water
    • The amount of water can vary based on the mix you use, and the exact amount of banana you have. My advice: SLOWLY add your water 1/2 cup at a time. If it ends up being pancake batter consistency before you hit 1.5 cups, that's totally okay! Stop there. You don't want it to be too runny.
  • 1/2 cup chocolate chips

Directions:

  1. Preheat the oven to 350.
  2. Use a stand mixer (or hand mixer) to combine the mashed banana, egg, sugar/stevia, and pumpkin.
  3. Once combined evenly, add in your pancake mix.
  4. Once combined, slowly add in the water 1/2 cup at a time. If your batter reaches pancake batter consistency before you reach 1.5 cups, stop there; you don't want them to be extremely runny!
  5. Evenly pour into a brownie/muffin pan and top with chocolate chips.
    • I had batter left over, and was able to bake 4 additional mini loaves after the first set of 12 came out, so this makes around 16 total!
  6. Bake for 12-14 minutes, or until golden brown.
  7. Enjoy!
