Protein Cookie Butter Crumble

If I had to eat one thing for the rest of my life, it would probably be cookie butter. You can find it at Trader Joes; it's life changing. You've been warned, once you buy it you'll never stop.

If I could, I'd load up my yogurt with half a cup of cookie butter every time I ate it, but clearly, I can't do that. But I don't love eating yogurt plain, so I wanted to figure out at way to make some sort of macro friendly topping.

I basically used the same base that I do for all of my protein balls, so if you'd rather make protein balls over over the crumble, you can!

What Can You Use this For

Use this topping just like you would granola!

  • as a smoothie topping

  • in a smoothie bowl

  • yogurt topping

  • fruit bowl

  • mix it into pancake batter

What You'll Need

  • cookie butter

  • peanut butter

  • honey

  • protein powder

A note on Protein Powder

The protein powder you use in a protein ball recipe is actually really, really important. Trust me when I say, I’ve tried them all and they are not all created equally.

Some get extremely clumpy and/or gritty when you combine them with other ingredients. Some don’t combine seamlessly with the peanut butter, some are chunky, etc. There are a lot of reasons certain protein powders don’t work; not all protein powders are great for baking, but IHM is!

Recipe

Protein Cookie Butter Crumble

This high protein topping is perfect for any smoothie bowl, yogurt bowl, or even mixed into pancake batter. You get the delicious cookie butter flavor, and a few extra grams of protein while you're at it! This recipe comes together in less than 5 minutes, and couldn't be easier to make!

  • 1/2 cup cookie butter

  • 1/2 cup creamy peanut butter

  • 2 Tbsp honey

  • 2 scoops (50g) vanilla protein powder

  • *mini marshmallows and chocolate chips were just additional toppings on the day I took this photo, but feel free to add those too!

  1. Combine peanut butter, cookie butter, and honey in a large mixing bowl.

  2. Microwave for one minute, then whisk until combined.

  3. Quickly fold in protein powder before your peanut butter mixture starts cooling.

  4. Place in the fridge for 20-30 minutes, or until hardened/completely cooled.

  5. Use a fork to crumble your batter.

  6. Enjoy!
