Street Corn Dip
Have I ever had real street corn? No. Do I know I'd love it? Yes.
If it tastes anything like the Aldi street corn dip I had this weekend, I can assure you it would be a top 5 favorite food for me. I picked up this dip for the first time last weekend and ate the entire tub by myself.
As with anything I love, my mind immediately jumps to, howcan I make this at home?
This was an easy one to dupe because this dip listed all the ingreidents on the container, I just kind of guessed on measurements! I nailed it on the first time, which never happens. Safe to say I'm impressed with myself.
Random thought, but the "Everything But the Elote" dip from TJ (I think it's called) also tastes exactly like this, it's bomb.

light sour cream
1/3 less fat (or fat free, or regular) cream cheese
light mayo
chili lime seasoning (from TJ, but chili powder will work too)
garlic powder
paprika
fire roasted corn
monterey jack cheese
cotija cheese
cilantro

Mexican Street Corn Dip
This street corn dip is a lightened up version of an Aldi and Trader Joes favorite dip! It takes less than 5 minutes to put together and it makes a ton! This creamy dip is the perfect combination of corn, street corn spices, and 3 different kinds of cheese. You will be obsessed in no time. This would make the best party app too!
8 oz 1/3 less fat cream cheese
1/2 cup light sour cream
1/2 cup light mayo
1 tsp chili lime seasoing (or chili powder)
1 tsp garlic powder
1 cup fire roasted corn
1/3 cup monterey jack cheese
1/3 cup cotija cheese
1 Tbsp fresh cilantro, chopped
This is a one step recipe! Mix everything in a stand mixer, or mix by hand, and serve!
