Sweet Potato Nachos

There is a short list of things on my "if I could only eat one thing for the rest of my life, it would be this" list, but I can safely say, this is one of them.

Not only is it so easy, and so delicious, but it's also macro friendly. Speaking from experience, nachos are never macro friendly, so this is a freaking winner.

Not only is this recipe delicious, but it can easily doubled if you're feeding a smaller group! It makes a wonderful appetizer or weeknight dinner, and it's kid friendly!

What You'll Need

  • sweet potato fries (frozen work better imo!)

  • lean ground turkey

  • taco seasoning

  • shredded lettuce

  • shredded mexican cheese

  • pico de gallo

  • fat free sour cream

  • jalepenos (optional)

  • green onion

  • cilantro

Loaded Sweet Potato Nachos

A macro friendly spin on one of my all time favorite things: nachos. With a base of crispy sweet potato fries, you can't go wrong. These bad boys are loaded up with ground turkey, cheese, and all the nacho fixins. You can add/take out whatever you don't love, super customizable to your family's needs. A great game day recipe, or easy weeknight dinner! Kid approved too!

  • 20 oz bag of frozen sweet potato fries

  • 16 oz lean ground turkey (I recommend the 93% lean)

  • 1 packet taco seasoning

  • 2 cups shredded lettuce

  • 2 cups reduced fat shredded mexican cheese

  • 1 cup pico de gallo

  • 1/2 cup fat free sour cream

  • 2 jalepenos, sliced

  • chopped green onion + cilantro for garnish

  1. Preheat oven to 400 degrees.

  2. Put your sweet potato fries on a baking sheet, spray with olive oil, top with salt, and bake for about 20-25 mins. Until they're extra crispy!

  3. While the fries are baking, cook your ground turkey in a skillet on medium heat. Once fully cooked, add your taco seasoning.

  4. When the sweet potato fries are done, layer with ground turkey, and cheese, then stick back in the oven for 5 mins or until cheese melts!

  5. Top with lettuce, pico, sour cream, jalepeno, green onion, and cilantro. Then serve and enjoy!
