3 Step Fajita Bake

Let me start by telling you something that might surprise you: I don't really enjoy cooking. Just because I'm a "food blogger" doesn't mean I love spending hours in the kitchen, or searching for 500 ingredients some recipe I found on Pinterest requires. I cook because I have to, just like you do.

What I do love? Showing you guys it doesn't take crazy fancy recipes to satisfy you and your families. You don't need fancy ingredients, or even a lot of ingredients to cook a healthy and delicious meal!

My goal is always to make things 1) easy, 2) quick, and 3) accessible. Pinterest overwhelms me, as do many of the recipes I find there, so that's what I'm trying to avoid when I'm creating recipes for you guys. I always try to make the ingredients minimal, so you can spend more time enjoying, and less time slaving in your kitchen.

That leads me to my newest favorite: 3 step fajita bake! This idea came to me after countless remakes of a different chicken/sheet pan recipe I make. We've been on a huge mexican kick during quarantine so I thought, why not try this? Fajitas are our favorite so I knew I wanted something along those lines, and here we are!

This recipe is extremely versatile and can be done just about any way you'd like! Just like restaurant fajitas, the proteins and veggies are completely interchangeable. I do chicken, because that's what we love, but you could try steak, pork, anything you like!

I think this bake is delicious on it's own, but you could easily add it to a bed of rice or lettuce for a fajita bowl, into a whole wheat tortilla, etc!

Ingredients:

  • 6 bell peppers, sliced
  • 4 large chicken breasts (raw), cubed
  • 1 packet taco seasoning
  • 1 packet dry ranch mix
  • 2 cups reduced fat mexican blend cheese
  • 1 lime

Directions:

  1. Preheat your oven to 350.
  2. Dump cubed chicken breasts into a greased 9x13 baking dish and pour dry ranch mix on top.
  3. Layer bell peppers and taco seasoning on top of the chicken.
  4. Squeeze the juice of one lime, and layer cheese on top of the chicken/pepper mix.
  5. Bake for 40 minutes!
