Banana Bread Bars with Cream Cheese Frosting

Banana bread is maybe a top three favorite food for me. I could eat an entire loaf on my own, absolutely no problem at all.

But you know what's easier than making banana bread from scratch? Making banana bread from a box, and adding two ingredients. Sorry not sorry. I do not have time to go hunting for baking soda in the depths of my pantry.

Alas, we have faux-made banana bread. Even better? It's healthy. No oils or added sugar!

What You'll Need

  • quick bread banana bread (Krusteaz, Pillsbury, etc - it'll be by the muffin mixes!)

  • canned pumpkin (will also be in the baking aisle near the pie fillings)

  • water

  • cream cheese

  • swerve confectioners sugar

Recipe Notes

Any time I talk about pumpkin, the first question I get is, "can you taste the pumpkin"? The answer is no. Pumpkin is an incredible alternative for eggs in almost any recipe, and you cannot taste the pumpkin. Pumpkin is essentially flavorless until you start adding things like pumpkin pie spice.

Eat this like you would any other banana bread! Use it as a snack, dessert, or even for breakfast! If you're using it as breakfast, make sure to pair with a fat and a protein, to round out a balanced meal!

Recipe

Banana Bread with Cream Cheese Frosting

The easiest banana bread you'll ever make! Just 3 ingredients in the bread itself. You'll never go back to homemade after you try it this way! And the cream cheese frosting is a non negotiable.

  • 1 box quick bread banana bread mix

  • 1 cup water

  • 1 cup pumpkin

  • 8 oz fat free cream cheese (doesn't have to be fat free, use whatever you can find!)

  • 1 /4 cup swerve confectioners sugar

  • 1 Tbsp vanilla

  1. Preheat the oven to 375 (or according to your quick bread box)

  2. Combine quick bread mix, pumpkin, and water, and mix thoroughly. (Note: depending on the brand you use, the batter may still be super thick - add in a little additional water, slowly, until you reach cake batter consistency).

  3. Bake for 30 minutes, or until a toothpick comes out clean.

  4. For the cream cheese frosting: use a mixer to combine room temp cream cheese with 1/4 cup swerve confectioners sugar, and 1 tbsp vanilla. Ice the bars once they're cooled!
