Cheesy Broccoli Chicken Bake

I'm going to keep this short and sweet today, you need to make this. This recipe was created thanks to you! After the Chicken Pot Pie Bake went over so well, I knew I had to create another version.

If ever there was a perfect kid friendly, husband friendly, picky eater friendly dish this would be it. It's a spin on the Chicken Pot Pie Bake, but a little more macro friendly.

This recipe is incredibly easy, requires minimal ingredients, and it comes together so quickly! I hope you guys love it as much as I do!

What You'll Need

  • shredded chicken

  • laughing cow cheese

  • riced cauliflower

  • frozen broccoli

  • canned biscuits

  • reduced fat mild cheddar cheese

Chicken

Y'all know I have absolutely no issue with canned chicken, but if you do, feel free to do it however you want! You can use canned, boiled / shredded chicken breasts, crockpot chicken breast, or shred a rotisserie chicken. Do whatever you want to do, that part isn’t important. But if you want a heck of a shortcut, canned it the way to go. It’s not gourmet, but when it’s in the casserole, you can’t tell. It truly is one of the biggest time savers!

Veggies

I use frozen chopped broccoli, but again, do whatever you prefer! This part isn't critical!

Shortcut

If you want a short cut, or if it's easier, you can replace the broccoli and laughing cow cheese with a bag of frozen broccoli in cheese sauce! I like the flavor of laughing cow better, and it's a little lighter, but this is definitely an option!

Cheesy Broccoli Chicken Bake

This recipe will have your family thinking you're Betty Crocker, and it couldn't be easier. It takes all of 5 minutes to put together and it tastes like it's been baking all day. A cheesy broccoli spin on the famous 'Chicken Pot Pie Bake'. Kid/husband friendly, and packed with veggies they won't even notice!

  • 1 16oz can homestyle biscuits

  • 1 16oz bag chopped frozen broccoli

  • 4 wedges light Laughing Cow cheese

  • 3 12.5oz cans premium chunk chicken breast (I get mine at Costco)

  • 1 10oz bag Steamfresh Savory Herb Riced Cauliflower (I use Birdseye)

  • 1/2 cup reduced fat, mild cheddar cheese

  1. Preheat the oven to 350 degrees.

  2. Steam your broccoli and frozen riced cauliflower according to directions on the bags.

  3. Combine the veggies, and add in Laughing Cow cheese while the veggies are hot.

  4. Drain chicken, and combine with cheesy veggies. Then add shredded cheese.

  5. Pour chicken mixture into a 9×13 baking dish, and spread evenly.

  6. Cut each biscuit into four pieces (8 pieces if they're big!) and layer the pieces on top of the chicken/veggie mixture.

  7. Bake for 25-30 minutes, or until tops of biscuits are golden brown.
