Street Corn Chicken Salad

I'm making a bold statement.

This is my favorite chicken salad to date. By far. There's a reason "elote" is one letter away from "elite", all I'm saying.

I didn't think I'd ever be able to pick one, but this one is next level. I'm a huge dip person, and this basically makes me feel like I'm eating more substantial dip.

I had seen people posting about the "Everything and the Elote Dip", but it was never in our Trader Joes until this week. I love street corn, so I knew right away I would love the dip. So much so that I went ahead and bought two tubs of it without ever having tried it. We all know what happens when you find something you love at Trader Joes. They naturally take it away (RIP sriracha ranch), so you need to be prepare, aka, hoard.

Because I love chicken salad so much, I tried the dip and knew immediately that it's creamy greek yogurt base would be an amazing chicken salad base. But I knew it needed a little more substance, which is when it dawned on me that I could add the TJ frozen street corn. And that's how this recipe was made!

What You'll Need:

  • Trader Joe's "Everything and the Elote" dip (I'm apologizing in advance if you're not near a TJ, but I did find this recipe that will help you make it on your own!)

  • light mayo

  • plain greek yogurt

  • Trader Joe's "Mexican Style Roasted Corn" (it's in the frozen section!)

  • canned white meat chicken (or rotisserie, or crockpot chicken, or whatever you'd like!)

  • lime juice

CHICKEN

You guys already know I have absolutely no issue with canned chicken, but if you do, feel free to do it however you want! You can use canned, boil chicken breasts, do it in the crockpot, or shred a rotisserie chicken. Do whatever you want to do, that part isn’t important. But if you want a heck of a shortcut, canned it the way to go. It’s not gourmet, but when it’s in the chicken salad, you can’t tell. It truly is one of the biggest time savers!

Street Corn Chicken Salad

My favorite chicken salad recipe to date, using two of my all time favorite Trader Joes ingredients. This recipe comes together in less than 5 minutes, and makes 5-6 portions! Make in on Sunday and in 5 minutes, you can have lunch for the entire wee! Or for your whole family for a night or two. This recipe couldn't be easier, it's delicious, and it's packed with protein!

  • 3 10.5 oz cans canned white meat chicken breast (about two cups if you're using other chicken)

  • 1 bag Trader Joes Mexican Style Roasted Corn

  • 1 tub Trader Joes "Everything and the Elote Dip"

  • 2 Tbsp light mayo

  • 2 Tbsp plain greek yogurt

  • juice from half a lime

  • cilantro to taste/garnish

  1. Drain your chicken of all excess liquid and place in a large mixing bowl.

  2. Microwave the corn according to bag directions and set cotija cheese packet to the side.

  3. Add all ingredients (except cilantro) in with the chicken and mix thoroughly.

  4. Serve and top with cilantro and cotija cheese packet from the roasted corn bag!

Turn this recipe into an appetizer

Make the recipe as stated in the directions, top with 2 cups of mexican cheese, and throw into the oven at 350 or until cheese is melted! Serve with chips, voila!
