Healthy Mexican Lasagna

She is the sweetest, most genuine follow! I have been following her for years now and love her so much!

She originally shared this Mexican Lasagna recipe 2-3 years ago. She makes it frequently and it's been on my list to make for a long time now, I just kept forgetting about it!

Her version is by no means unhealthy, but I knew with just a few tweaks I could increase the protein, add some veggies, etc. So that's what I did!

Recipe Notes

This recipe is INSANELY good and perfect for a weeknight family meal. This could even be prepped a few days ahead of time, and then you can throw it in the oven when you're ready to make it!

It's definitely not spicy at all, and 100% kid friendly. Especially if you're using mild salsa, but feel free to use sriracha, hot salsa, jalapenos, etc. The recipe can definitely be tailored to what you like!

I serve this recipe with greek yogurt (in place of sour cream), shredded lettuce, pickled onion, and a little extra salsa!

What You'll Need

  • lean ground turkey

  • shredded mexican cheese

  • refried beans

  • low carb tortillas

  • salsa

  • taco seasoning

  • bell pepper

This recipe is a lightened up spin on Madi Nelson's famous Mexican Lasagna! It's incredibly high in protein, it's packed with veggies, and it is so freaking delicious! It's also kid friendly and it couldn't be easier to make!

  • 1 lb 99% fat free lean ground turkey

  • 1 packet taco seasoning

  • 1 jar (15 oz) mild salsa

  • 2 bell peppers, diced

  • 1 cup fat free refried beans

  • 6 low carb tortillas

  • 8 oz reduced fat mexican shredded cheese

  1. In a medium skillet, brown your ground turkey. Once cooked, add in taco seasoning, salsa and bell peppers, and simmer for 10 mins.

  2. Next, spread a thin layer of refried beans on each tortilla.

  3. In a 9x13 in baking dish, spread1/3 of the meat/pepper mixture. Lay 2 tortillas on top.

  4. Layer another 1/3 of the meat mixture, 1/3 of the cheese, and 2 more tortillas.

  5. Layer the last 1/3 of the meat, 1/3 of the cheese, and the last 2 tortillas. Top with remaining cheese and cover with foil

  6. Bake at 350 for 30 mins!
