Skillet Gnocchi Lasagna
Lasagna. You love to eat it, hate to make it! For real. It takes forever, it's daunting to me, too many ingredients, way too much time, all the things I hate about cooking. Real true Italian style lasagna just requires more time and patience than I have when it comes to cooking.
Especially if I can make a “fauxmade” version that is equally as delicious, way less time consuming, and a whole lot healthier than the real deal! And a one-pan meal with only 4 ingredients?! A winner in my book since I am not only the chief cook but also the head dishwasher in my family.
The secret ingredient in this recipe is Trader Joe’s Cauliflower Gnocchi in place of the lasagna noodles. We love these in so many different recipes, and they are perfect in this recipe – even for those who may not think they like cauliflower! I promise, you won't miss the noodles! I use the gnocchi from Trader Joes but I know Green Giant has their own version now that can be found at Target and Walmart if you don't have Trader Joes!
The marinara sauce and ground turkey come together perfectly and totally disguise any trace of cauliflower in the gnocchi! In addition to being easier than the whole layering of the noodles situation, the gnocchi is also a lower carb option, which is perfect for those of you who might be macro counting right now!
The other three ingredients are marinara sauce, mozzarella cheese (and/or parmesan), and round turkey.
I love all the different marinara flavor options that are available now, and any of them would work for this recipe. Spicy, chunky with onions and peppers, cheesy, tomato cream sauce … so many great choices. Ragu (and several others) has a good low-sugar marinara sauce if you are interested in reducing the sugar/carbs even more. Pick your favorite and run with it, you can't go wrong!
I love using ground turkey in this recipe. It's lower in fat than ground beef, and it takes on whatever flavor you are mixing it with. Lean ground beef or ground chicken would both work equally as well if you like either of those btetter. There are tons of ways to lighten this up, without sacrificing any of the flavor which is the best part!

My very picky recipe taste tester approves, so I know it is kid friendly. 😉 He even requested it over Chick Fil-A the other night so I feel confident it will appeal to a wide range of ages and taste buds! Easy Gnocchi Lasagna
The recipe title says it all! This recipe is a quick and easy macro friendly lasagna that does not lack in the flavor department. It only takes 20 minutes to make, requires minimal ingredients, and tastes like you spent all day cooking! You'll never make lasagna the old way again!
1 bag TJ cauliflower gnocchi
16 oz 99% lean ground turkey
1.5 cups Raos marinara (brand doesn't matter, use what you love)
1 cup low fat shredded mozarella cheese
Italian seasoning
salt and pepper to taste
Season your ground turkey with salt and pepper, and Italian seasoning. Then add to a greased skillet and cook for about 8-10 minutes on medium heat, or until fully cooked.
While the turkey is cooking, spray another skillet with olive oil, and add your bag of cauliflower gnocchi. Turn the heat up to medium, and don't touch it!
After 3-4 minutes, flip the gnocchi. Then do this every minute or so until it's crispy on all sides.
When the gnocchi is done, add in your marinara sauce and let the gnocchi simmer on low. for 6-8 minutes.
When the turkey is done, add in with the gnocchi and marinara.
Top with cheese, stir until melted, and you're done!
